Tex Commando

I'm not angry, just outspoken

So, I didn’t have any buffalo sauce for the wings last night. I like hot wings, so I was partially pissed that I would have to have BBQ sauce on them. Until I remembered that I can concoct things that usually taste pretty good. That’s how this sauce came into existence.

  • 1/2 cup butter
  • 1/4 cup ketchup
  • 1/4-1/3 cup hot sauce*
  • 1/3 cup honey
1. Cook on medium heat until bubbly.
2. Reduce heat to low for 10-15 minutes.
3. Divide sauce. Use some for basting the wings on the grill. The honey caramelizes nicely on the wings. After they are done grilling use the uncontaminated sauce to coat the cooked wings.
*Use whatever hot sauce you like. I started with my favorite ‘mild’ hot sauce, Cholula. That wasn’t enough heat for me, so I switched to Rooster Sauce because I knew it would give me some good heat. If you have a suggestion about a better combination, please let me know.
